This cookbook is the result of my laziness as a chef and my inability to time my appetizers, entrees, and desserts using an oven for all of them. The first time I made a no-bake cheesecake was when I had my family over for the holidays. I couldn't figure out how my roast chicken was going to stay moist when I had to lower the heat and stick a cheesecake in the oven. I then found a no-bake cherry cheesecake I could make ahead of time easily without added stress. I prefer this method as I think most people do because it saves space when you are trying to cook a large meal, and you could even make it the day before and not worry about freshness.
